Chicken and Waffles

This sweet and savory dish is one of the most requested breakfasts at the B&B!

Admittedly, it is an unlikely combination: creole fried chicken and real maple syrup! Chicken and Waffles are always a hit at the B&B!

Chicken and Waffles is a southern tradition dating back to the 1800's. While the seasonings and preparation methods may have changed, the popularity of this dish is on the rise. This dish is becoming a star at restaurants around the US. It is eaten any time of day; Breakfast, Lunch, or Dinner.

Our version of Chicken and Waffles blends traditional Belgian waffles, made with beer, and adds a little Creole kick to the fried chicken. The waffle recipe is a stand out in it's own right and the chicken is MMM mmm good, everytime! They are great served together or on their own.

I cannot take credit for the originality of this recipe. I have had this one in my cookbook for many years. It likely came from one of the TV chefs. (I am a big fan of Chef Robert Irvine and Chef Emeril Lagasse.) I found the original recipe to be really complicated! Our adaptation simplifies the recipe, so that it is manageable for a home kitchen.

This dish is popular with our family for dinner, so we usually fry large batches of chicken. If  the guest leave us with any leftovers, we freeze the chicken in a single layer on a cookie sheet. Once frozen, we place in a gallon freezer bag. To reheat later, we either deep fry it for 6 minutes or bake in the oven at 425 degrees F for 18-20 minutes.
