Our Signature Recipe

We wanted to create a breakfast recipe that produces a "Montana" size meal and also pays tribute to the pioneer heritage of the Big Sky! One of our original recipes, the Montana Skillet features seasonings from Montana Spice Trader. Paired with a side of fresh fruit and some toasted homemade bread, this hearty dish is....MMMmmm good!
At the Bed and Breakfast, we strive to serve meals which showcase foods grown and produced in Montana. For this recipe, we partnered with Montana Spice Traders. After trying several combinations of ingredients, we fell in love with the ham and cheese skillet. This dish cooks just as easily over a sunrise campfire, as it does in fancy kitchen!

A skillet dish, also known as a frittata, can be difficult to master, but we have simplified it for you in this recipe. The Montana Spice Trader recipe for High Camp Bacon, Potato, and Cheese Frittata was our starting point for creating this recipe. Always one to 'march to the beat of a different drummer,' I immediately rejected the broccoli and added more cheese. The dish taste great with mushrooms, sausage, and various othe combos. This is the type of dish, you can throw almost anything in it and get a good result!

Their recipe suggests the traditional method of cooking the frittata on the stove top, but working with a ceramic top stove, I find that impossible to do without burning the bottom! After experimenting with several methods of cooking the dish, we found the best success by starting on the stovetop and finishing the frittata under the broiler. An even easier method, as explained in our recipe, is to bake it in the oven, for a slow even finish.

To make an easy breakfast when you are out 'on the range' just beat the eggs, then toss in leftover meat and pototoes. Cook over campfire, turning frequently to prevent scorching the bottom.
